we have a treat for our francophile fryers this week. the owners of la fournette in old town call their shop "an authentic french bakery." and with their pedigree, who would argue! chef pierre zimmermann comes from a long line of french bakers; he was the fourth generation member of his family to run boulangerie zimmermann in schnersheim, france until moving to chicago in 2009. the baked goods at la fournette are exactly what you'd expect from a chef whose family has been in the boulangerie business for 110 years: freshly baked breads, delicious apricot danish, raspberry beignets (not the kind you find in a second hand store) and buttery croissants. this baker also knows how to make a delicious croque-monsieur! (that's a toasted ham and cheese sandwich for you fryers who spend more time at hot dog stands than boulangeries.) did we mention chef pierre is also a world baking champion? after consuming several of his pastries, these cousins agree with the judges!
